My final photo challenge…blue photo.

This photo reminds me of life’s simple pleasures. I remember how much my children enjoyed having a large balloon tied to their wrist, watching it bob and drift and sway. Then, when the moment was right…letting it go and watching it drift away into the clouds. Simple pleasures…sweet!

And…another sweet pleasure, as promised, the recipe for Blue…Berry Cheesecake Bars. Poppy and I really like the way this recipe turned out.

Mom’s Blueberry Cheesecake Bars / Bites

Delicious Bites of Blueberry and Cheesecake

Ingredients:

  • 3 Tablespoons sugar
  • 2 teaspoons cornstarch
  • 1 cup blueberries (fresh or frozen)
  • 1/4 cup orange juice
  • 2 cups flour
  • 1/2 cup confectioner’s sugar
  • 18 Tablespoons butter (one cup plus 2 Tablespoons)
  • 4 whole graham crackers, crushed
  • 8 oz. cream cheese
  • 1/2 cup sugar
  • 1 Tablespoon flour
  • 2 eggs
  • 2 teaspoons orange zest
  • 1 teaspoon vanilla

To Make:

Preheat oven to 350 degrees.

Place sugar, cornstarch, orange juice, and blueberries in a small saucepan. Cook, over medium heat, until bubbly and mixture thickens. Remove from heat.

Crush the graham crackers.

Place flour, confectioner’s sugar and graham crackers into a bowl or mixer.

Cut the softened butter into small pieces (Tablespoon size) and blend into flour mixture until mixture resembles coarse crumbs.

Press mixture into a foil or parchment lined 9×13 pan.

Bake for 20 minutes in preheated oven.

For the filling:

Blend softened cream cheese with sugar and flour.  Add eggs, one at a time, blending after each addition.  Add vanilla and orange zest.

Pour the cream cheese mixture over the hot crust.

Spoon blueberry mixture over the cream cheese mixture.

Cut through the blueberry mix and swirl through the cream cheese mixture, just enough to distribute evenly.

Place pan back into the oven and bake for another 20 minutes or until set (should look firm).

Allow to cool and then place in refrigerator to cool for a few hours or overnight before cutting.

Sprinkle with a light dusting of confectioner’s sugar if you like and…

    1. They are fantastic indeed! Frozen blueberries are great! I’ve never tried freezing my own. They probably flash freeze them commercially…which makes them taste quite fresh! Did you freeze your own?
